Ingredients
Cheese Sauce:
3 tbsp or 42g Butter
3 tbsp or 42 g Flour
1 cup or 250ml Heavy Cream
1/2 cup or 125ml Milk
1 cup or 90g Grated Sharp Cheddar Cheese
Salt and Pepper to Taste
Recipe for Scalloped Potatoes:
Scalloped Potatoes Cheese Sauce
4 Cups or 700g Potatoes (Russett – peeled, sliced 1/4 inch or 6mm thick)
Dash of Cayenne Pepper
1/2 cup or 45g Grated Sharp Cheddar Cheese
Preparation
1.Melt 3 tbsp butter in a saucepan over medium heat. Then add 3 tbsp or 42g flour and cook for 2 to 3 minutes.
2.Pour in the milk and cream and whisk it into the butter and flour mixture. Cook over medium until the sauce becomes thick.
3.Take the sauce off the heat and add 1 cup of shredded sharp cheddar cheese and stir into the sauce.
4.Taste the sauce and adjust the seasoning – add some salt and pepper as needed.
5.Peel the potatoes, cut them ¼ inch or 6mm thick, and put them into a water bath for 5 minutes.
6.Dry the potatoes off and put a layer of them into the bottom of a buttered 8x8 baking dish. Add 1/3 of the cheese sauce on top of the potatoes, add the rest of the potatoes and cover with the remaining amount of the cheese sauce. Spread the cheese sauce evenly over the entire top of the potatoes. Add 1/4 cup or 45g shredded sharp cheddar cheese (optional) and sprinkle some cayenne pepper on top.
7.Bake in the oven at 350˚F or 176˚C uncovered for 1 hour.
