Ingredients

  • 2 tbsp fresh oregano chopped

  • 2 tbsp fresh basil chopped – save the stems

  • 2 tbsp fresh parsley chopped – save the stems

  • 5 cloves of garlic minced

  • 1/2 tbsp black peppercorns

  • 1/2 cup or 113g unsalted butter

  • 1/2 tbsp red pepper flakes

  • 1 tbsp or 15g dark brown sugar

  • 2 tbsp or 30ml red wine vinegar

  • 1/2 tsp cayenne pepper

  • Juice of 1/2 lemon

  • 1 tsp or 7ml hickory smoke liquid smoke

  • As much tabasco as you like

  • Dash of celery salt

  • 1/4 cup of parmesan cheese

Preparation

1. For the prep work: Chop the fresh oregano, basil and parsley, grate the parmesan cheese, and smash the black pepper corns.


2. To make the sauce: Toast the black pepper corns in a skillet or sauté pan over medium to high heat. Once toasted add the butter, garlic, parsley and basil stems, red pepper flakes, minced garlic. When the butter is fully melted cook everything on medium heat for 1 to 2 minutes.


3. Turn off the heat and remove the parsley and basil stems.  Add the dark brown sugar, mix and dissolve the sugar into the butter mixture.   Pour in red wine vinegar, add the cayenne pepper, and the juice of half of lemon and stir.


4. Add the basil, parsley, and oregano mix. Pour in the liquid smoke, tobacco and celery salt, stir.  Then add the parmesan cheese and mix.
