About the Recipe
I hope you enjoy this twist on the classic American comfort food dish! For a little history, the original recipe was created in 1888 by James Henry Salisbury an American physician.
Ingredients
Hamburger Steak Ingredients:
1lb or 500g ground beef
1/4 cup or 35g bread crumbs
1 packet of French onion soup mix
1/2 tsp ground mustard
1 large egg
2 tbsp or 30ml Worcestershire sauce
1 to 2 tbsp or 15 to 30ml olive oil
Mushroom and Onion Gravy Ingredients:
2 tbsp or 28g butter
1 medium onion or 150g
2.5 cups or 227g sliced mushrooms (one 8oz box)
2 garlic cloves minced
1/3 cup or 83ml red wine
3 tbsp or 24g butter
3 tbsp or 24g flour
3 cups or 750ml beef broth
1 tbsp or 15ml Worcestershire sauce
1 tsp of Low sodium soy sauce
3 tbsp or 55g ketchup
Salt and pepper to taste
Preparation
1.Make the Salisbury steaks first: In a large mixing bowl, add all the steak ingredients. Mix with a spatula or spoon, cover, and let the meat rest in the refrigerator for at least an hour.
2.Pat out four 1/4 pound or 125g Salisbury steak patties.
3.Add olive oil to a high-sided saucepan over medium to high heat. Once the oil is hot, add the Salisbury Steaks. Sauté the steaks for 2 to 3 minutes on each side to give them a nice sear. Remove the steaks from the pan, cover them, and put them to the side.
4.Put the pan you used to sauté the steaks over medium heat. Brown them don't cook through remove steaks from pan and add 2 tbsp butter and melt it down.
5.Add the chopped onions and sliced mushrooms to the pan and sauté for 10 minutes over medium to high heat. Be sure to scrape the bottom of the pan to release the bits and pieces of steak to help combine them into the gravy. When the onions and mushrooms have about 2 minutes left, add the minced garlic.
6.Deglaze the pan with red wine. Reduce the wine down until it is pretty much all gone.
7.Move the onions and mushrooms to the side of the pan, making a well in the center of the pan. Add 3 tbsp or 24g butter to the center of the pan and melt it down. Mix the flour into the melted butter, then combine all the ingredients and cook for 2 to 3 minutes to remove the flour taste.
8.Pour in the beef broth. Use a spatula or spoon to mix it in well with all the ingredients. Add the Worcestershire sauce, low sodium soy sauce, and ketchup. Bring to a simmer over medium-to-medium-high heat.
9.Add the Salisbury steaks back to the pan and bring back to a simmer and reduce heat to low to medium and slowly simmer the gravy and steaks for 10 to 15 minutes or until the steaks are done.
10.Give the gravy a taste and adjust the seasoning with salt and pepper if needed.
