Ingredients

  • 1 cup of light green, with a little white, section of a leek

  • 3 tbs or 42g butter

  • 1/4 cup or 63ml chicken stock

  • 1 cup or 250ml heavy cream

  • 1/2 tsp chervil

  • 1/4 tsp salt

  • 1/4 tsp white pepper

Preparation

1. Take a leek, cut it in half - down the center starting at the top of the white section through the green leaves on top.  Clean it – outer and inner leaves to remove the sand and grime.


2. Cut the middle section out of the leek – light green and slightly white area. Julienne the leek – cut it into 2-inch strips.


3. To make the sauce: Add butter to a sauce pan over medium heat.  Once melted add the leeks, coating them in the butter.  Cook until the leeks are tender – roughly 2 minutes.


4. Add the chicken stock and reduce by ¾ then add the heavy cream, chervil, salt and white pepper.  Mix, bring to a simmer then lower the heat and reduce until the sauce becomes thick and coats the back of a spoon.
